Fruit Cake to the following recipe: 5oz (150g) butter, 5oz (150g) sugar, 3 large eggs, 8oz (225g) plain flour, 1 teaspoon baking powder, 6oz (175g) currants, 6oz (175g) sultanas, 2oz (50g) glace cherries in halves, 2oz (50g) mixed peel chopped (optional), 1 tablespoon milk if required, Grated rind of lemon or orange juice may be used in place of milk, 2oz (50g) whole blanched almonds arranged on top of cake prior to baking.
Bake at gas mark 3 / 170 deg. C or 325 deg.F for 2 - 2 1/2 hours.
Bake in 7 or 8 inch round tin which has been greased and lined.
